A brief tour throughout the traditional dishes of one of the most appreciated cuisines in Italy.

In Apulian cuisine you find the freshest and typical ingredients of Puglia. Its main ingredients are wheat, tomato, olive oil and wine. The region abounds in homemade pasta made by farmers. Olive oil is used in all the Apulian cuisine. Red wine is the top of each good meal in Puglia, which usually consists of a first course of pasta with fish or vegetables, a second course of meat or fish with a side dish, usually vegetables, and then fruit.

Seafood in Apulian cuisine

The Seafood  deserve a special mention, so abundant in the region, humble fish, anchovies, mussels, sea urchins. Raw fish marinated in lemon is widely eaten in the Puglia -  and Bari, the largest and most important city, is considered the Italian capital of this kind of fish.

Agritourism: the true taste of Puglia

If you want to taste the true taste of Puglia, its fresh products, try one of the many “Agritourism” in the area. “Agritourisms” are agricultural estates which have a restaurant where all the dishes on the menu are made with products cultivated in the farm - . Everything is homemade, even desserts and wines.

The menu may change according to the variety of products grown in the farm, but I can assure you will not find anything more fresh and tasty. They are usually not expensive and some even offer affordable possibility of overnight stay.

Eating in southern Italy: for adventurous people.

Although southern Italy is famous for its seafood cuisine, you can also taste delicious red meat. Italians like eating and they are picky choosing their dishes, anyway they usually taste everything. One curious thing is eating in butchers - . In Puglia, places that are common butchers but, in the evening, become informal places to taste just meat. Many Italians usually visit these places in the evenings, when roast meat is cooked on the grill. The customer choose the cut he likes and meat is cooked on the spot. There are usually baked onions, potatoes or vegetables as side dish. They are places where you can spend a pleasant time in the company of friends. The atmosphere is jovial and youthful.

Horse meat in apulian cuisine

But if you aren’t open-minded, look carefully and ask before ordering your meal; in southern Italy people usually eat horse meat - . This dish is very common in some areas, specially in Puglia. I haven’t tried it but I assure you it looks very appetizing.

Concerning seafood and fish, it should also be open-mind to try new things. Other common dishes in the area are sea urchins, sea eels, raw fish marinated in lemon, among other things. My advice is: forget all prejudices and try it, you could miss out on a true delicacy.
